Another month, another glorious cake for #BundtBakers. This time, it’s a Cinnamon Apple Bundt; moist, tender and absolutely delicious, perfectly fitting for our cinnamon theme.

For the month of February, our gracious host, Lauren of Sew You Think You Can Cook, challenged us to come up with a bundt cake the wonderful spice, cinnamon.

I’ll be the first to admit that I’m a fan. Cinnamon’s used in my favorite food, moussaka, and whenever I’m at an airport that includes the kiosk, I’ll be following my nose to the first Cinnabon I find.

Whenever I think of cinnamon, however, pairing it with apples is the first thing that comes to mind. There’s a reason that 47% of Americans choose apple pie as their favorite, after all.

So, as I pondered how to use cinnamon in this month’s #BundtBakers challenge, I couldn’t imagine doing anything but coming up with a cake that included those two favorites, apples and cinnamon. Since my schedule this month is very busy, I also streamlined the process as much as possible, making this a cake that comes together quickly.

I love desserts like that.

The Process

Ah, the glory of a simple cake. Peeling and chopping up the apples is the only real work. Other than that, it’s a matter of whisk, fold, pour, bake. Easy.

The Verdict

What’s not to love about cinnamon apples in a cake? As expected this cake is delicious and a favorite with everyone.

  • 2½ cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup (2 sticks) butter, melted
  • 1½ cups packed light-brown sugar
  • 4 large eggs
  • 4 tart apples, peeled, cored coarsely chopped
  • 1 cup confectioners' sugar
  • 1 to 2 tablespoons lemon juice
  1. Preheat oven to 350 degrees. Spray a bundt pan with non-stick spray.
  2. Whisk together the flour, cinnamon, baking powder, salt, and baking soda in a bowl.
  3. Mix the butter, brown sugar, and eggs in a large bowl until smooth. Add in the dry ingredients and mix until combined..Fold in apples.
  4. Pour the batter into a Bake 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on rack 15 minutes; invert on the rack and cool completely.
  5. Whisk together confectioners' sugar and enough lemon juice to form glaze. Set rack with cake over a piece of wax paper (for easy cleanup); drizzle cake with glaze, and let set before serving.
